According to the National Coffee Association, one prominent legend is of a 9th century Ethiopian goat herder who noticed that his goats gained so much energy that they didn’t want to sleep after eating the berries from a certain tree. Upon reporting his discovery to his local monastery, the abbot made a drink with the berries and found that it kept him attentive through his long, nightly prayer services.

After many centuries, word of this energizing beverage began to spread quickly throughout the Arabian Peninsula. This marked the beginning coffee’s long journey of cultivation and experimentation across the globe.

During the Ottoman Empire, people began roasting coffee beans, which gave it the characteristic flavor we’ve grown accustomed to. Roasting the green coffee beans creates a chemical reaction, known as the Maillard Reaction which gives it a distinct aroma compounds and more complex flavor profiles. This roasting process helped create the classic coffee flavor we know and love today.
